We packed tons of flavor, fat, and fiber into this simple spinach dip, combining sour cream and mayonnaise with spinach, herbs, red bell pepper, scallions, garlic, and even a little kick of hot sauce. The food processor helped distribute the spinach evenly throughout the base of mayonnaise and sour cream and gave the dip a smooth texture.
10ouncesfrozen chopped spinachthawed and squeezed dry
½red bell pepper4 ounces, chopped fine
½cupsour cream
½cupmayonnaise
½cupfresh parsley leaves
3scallionssliced thin
1tablespoonfresh dill or 1 teaspoon dried
1garlic cloveminced
½teaspoontable salt
¼teaspoonhot sauce
¼teaspoonpepper
Method
Process all ingredients in food processor until well combined, about 1 minute. Transfer to serving bowl, cover, and refrigerate until flavors meld, at least 1 hour. Season with salt and pepper to taste. Serve.
