Honey Dressing
Compared to other sweeteners, honey has higher levels of antioxidants and is also better at helping steady blood-sugar levels. Here it adds just the right amount of sweetness to the dressing. Before pouring the honey, spray the inside of the measuring cup with oil. It will pour out of the cup without making a sticky mess.

- ΒΌ cup honey
- 1/3 cup red wine vinegar
- 2 tablespoons minced scallions
- Dash of salt
- Dash of ground black pepper
- 2 tablespoons extra-virgin olive oil
In a small bowl, whisk together the honey, vinegar, scallions, salt, and pepper. While whisking, stream in the oil and whisk until combined. Taste and adjust seasonings. Toss over any salad.
