Jerk Shrimp With Sweet Potato And Black Beans

This Caribbean-inspired dish uses jerk seasoning, which is made from a variety of spices including allspice, cloves, cinnamon, thyme, and plenty of hot peppers. It provides a flavor punch while adding very few calories. When possible, look for US farmed or wild shrimp, which is more sustainable than imported.

Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 2 tablespoons jerk seasoning
  • 1 tablespoon canola oil
  • 1 sweet potato thinly sliced
  • 1 can 15 ounces black beans, drained and rinsed
  • 3 cloves garlic sliced
  • 1 jalapeño chile seeded and minced (wear plastic gloves when handling)
  • 2 scallions sliced
  • ¼ cup orange juice
  • Chopped fresh cilantro

Instructions
 

  • In a large bowl, toss together the shrimp and jerk seasoning.
  • Heat a wok or skillet over medium-high heat. Add the oil. When hot, add the shrimp. Cook, stirring, for 3 minutes, or until they turn pink. Remove from the wok.
  • Add the sweet potato to the wok and cook for 4 minutes, or until tender. Stir in the beans, garlic, chile pepper, and scallions. Cook, stirring constantly, for 1 minute.
  • Stir in the shrimp and orange juice. Heat for 30 seconds. Serve garnished with the cilantro.
