- 6 ounces semisweet chocolate chips about 1 cup
- 3 tablespoons butter
- ¾ cup quick-cooking oats
- 1/3 cup toasted wheat germ
- 1/3 cup fat-free dry milk powder
- ½ cup chopped walnuts
- 1 egg
- 2 egg whites
- ½ cup packed brown sugar
- 1 teaspoon vanilla extract
Preheat the oven to 350ºF. Coat an 8" x 8" baking dish with cooking spray.
Put the chocolate and butter in a microwaveable dish. Melt in the microwave on medium power for 30 to 45 seconds. In a bowl, stir together the oats, wheat germ, milk powder, and walnuts.
In the bowl of an electric mixer, beat together the egg and egg whites, brown sugar, and vanilla extract. Stir in the melted chocolate and beat until smooth.
Stir in the oat mixture. Pour the batter into the baking dish. Bake for 20 to 25 minutes, or until a toothpick inserted in the middle comes out clean.
When the brownies are cool, cut them with a sharp knife coated with cooking spray.
