Instructions:

  • Preheat the oven to 350°F.
  • Grease a mini muffin tin well with corn oil to prevent sticking.
  • Mix the oats, flaxseed, cornstarch, and cinnamon in a large bowl.
  • Add the molasses and water, mixing well to coat the oats.
  • Stir in the grated apple and carrot.
  • Fill the muffin cups 3/4 full.
  • Bake for about 15 minutes or until done.
  • While the muffins are still warm, press a peppermint into the center of each muffin. Let them cool completely.
