• 1 lb Tagliatelle pasta
• 2 cups Fresh shelled peas
• 3 tbsp Extra virgin olive oil
• 1 small red chile (minced)
• 1/2 cup Grated Parmesan or Pecorino
• 1/4 cup Fresh mint leaves (torn)
• Sea salt (to taste)
• Black pepper (to taste)

👩‍🍳 INSTRUCTIONS

Step 1: Bring a large pot of salted water to a boil. Drop in the peas and cook for 3-5 minutes until tender. Use a sieve to scoop them out and set aside.
Step 2: Add the tagliatelle to the same boiling water. Cook until al dente. Don’t forget: Reserve 1/4 cup of the pasta water before draining!
Step 3: While the pasta boils, heat 2 tbsp oil in a saucepan. Sauté the chile and cooked peas for 2 minutes, stirring occasionally.
