📋 INGREDIENTS

For the Filling:
• 1 tbsp olive oil
• 1 small onion, finely chopped
• 1 bell pepper (any color), chopped
• 1 jalapeno, finely chopped (optional)
• 250g chicken tenders, cut into small pieces
• 1 tsp garlic powder
• 1/2 tsp paprika
• Salt and pepper to taste
• 1/2 cup heavy cream
• 1/4 cup chicken broth
• 2 tbsp fresh parsley, chopped
For the Cake Batter:
• 1 1/2 cups all-purpose flour
• 2 tsp baking powder
• 1/2 tsp salt
• 2 large eggs
• 3/4 cup milk
• 1/4 cup melted butter or oil

1 Make the filling: Heat oil in a skillet over medium heat. Add onion, bell pepper, and jalapeno (if using) and sauté until softened, about 5 minutes. Add the chicken pieces and cook until no longer pink. Stir in garlic powder, paprika, salt, and pepper.
2 Make it creamy: Pour in the heavy cream and chicken broth. Bring to a gentle simmer and cook for 5-7 minutes, or until the sauce thickens slightly. Stir in the fresh parsley. Remove from heat and let the filling cool completely. (This is important so it doesn’t cook the batter!)
3 Make the batter: In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, beat the eggs, then whisk in the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; a few lumps are okay.
4 Assemble the cakes: Lightly grease a large skillet or a griddle. Pour a small ladleful of batter onto the skillet to form a small pancake (about 4 inches wide). Immediately spoon a generous tablespoon of the cooled chicken filling onto the center of the batter.
5 Cook: Carefully pour another small ladleful of batter over the filling to cover it completely. Cook over medium-low heat for 3-4 minutes per side, until golden brown and cooked through. The batter should be set and the cake should be easy to flip. Repeat with remaining batter and filling.
