📋 INGREDIENTS

• 8 oz Bow tie (farfalle) pasta
• 1/2 cup Bulgur (fine or medium)
• 3 tbsp Extra virgin olive oil
• 1 small Onion, finely chopped
• 2 cloves Garlic, minced
• 1/2 cup Kalamata olives, pitted
• 2 cups Cherry tomatoes, halved
• 1/2 cup Feta cheese, crumbled
• 2 tbsp Fresh lemon juice
• 2 cups Fresh arugula
• Salt and black pepper to taste
• Reserved pasta cooking water

👩‍🍳 INSTRUCTIONS

Step 1: Sauté the aromatics. Heat oil in a large skillet over medium heat. Cook onion and garlic for 5 minutes until soft and fragrant.
Step 2: Build the sauce. Stir in the olives, lemon juice, tomatoes, and feta. Season with salt and pepper. Cook just until tomatoes are heated through, then turn off the heat.
Step 3: Boil grains and pasta. Bring a large pot of salted water to boil. Add bulgur first, return to boil, then add the bow ties. Cook until tender (usually 8-10 mins).
