📖 The Story

Believe me, there is something absolutely magical about a soup that comes together using just the bits and bobs hiding in your pantry. Trust me on this, this Spring Minestrone is the ultimate “clean out the fridge” family favorite that actually tastes like a gourmet meal! I remember the first time I tried making a proper minestrone; I thought I needed every vegetable under the sun to make it work. I ended up with a pot so crowded the spoon could practically stand up on its own! It was a bit of a disaster, but it taught me a huge lesson: it’s all about the balance of those simple staples like carrots, celery, and a good quality broth.

You’re going to love how the leafy escarole just wilts perfectly into the hot broth, adding that beautiful pop of green without being overpowering. In my house, we call this the “recovery soup.” Whether it’s after a long week or just one of those Sunday family dinners where we want something light, this is what I reach for. There’s a rhythmic, soothing sound to the whisk of the spoon against the side of the pot as the pasta dances around with the beans. It’s almost like a kitchen lullaby. The smell is what gets everyone to the table, though—that incredible aroma of Italian seasonings and red pepper flakes hitting the hot oil. It’s spicy, herbaceous, and deeply comforting.

When you hear that first sizzle of the onions hitting the pan, you know something good is happening. This recipe is so soft on the palate but packed with textures—the creamy bite of the beans against the tender pasta is just perfection. My first attempt at this specifically used way too much pasta, and by the next morning, it had soaked up every drop of broth! Now I know to keep the pasta “bite-sized” and just the right amount. It’s become a total chai time favorite conversation piece when friends come over and ask for the secret to my “fancy” soup. I just laugh because it’s really just the magic of simple ingredients done right. Believe me, once you master this, you’ll feel like a kitchen pro every single time the steam hits your face as you lift the lid.

• 6 cups Vegetable broth
• 1 can (14oz) Diced tomatoes
• 2 tbsp Olive oil
• 1 medium Onion (diced)
• 2 stalks Celery (sliced)
• 2 large Carrots (diced)
• 1 tsp Italian seasonings
• 1/2 tsp Red pepper flakes
• 1 can (15oz) Cannellini beans
• 1 cup Frozen peas
• 2 cups Escarole (chopped)
• 1/2 cup Small pasta (ditalini)
• Salt & Pepper (to taste)

👩‍🍳 INSTRUCTIONS

Step 1: Combine broth and tomatoes in a microwave-safe bowl. Heat on high for 5 minutes until steaming.
Step 2: Heat oil in a large pot over medium-high. Sauté onion, celery, and carrots for 5 mins until tender.
Step 3: Stir in Italian seasonings and pepper flakes; cook for 1 minute until the aroma fills your kitchen.
Step 4: Add the broth mixture, beans, peas, escarole, and pasta. Season with salt and pepper.
Step 5: Cover and bring to a simmer. Reduce heat and cook partially covered for 15 mins until pasta is tender.

👃 AROMA GUIDE

1 Stage 1: The bright, citrusy scent of warm tomatoes and broth.
2 Stage 2: Toasty herbs and a slight spicy tingle from the red pepper flakes.

🔧 PRO TIPS

Pasta Prep: If you plan on having leftovers, cook the pasta separately and add it to the bowls so it doesn’t get mushy.
Escarole Substitute: Can’t find escarole? Chopped kale or fresh spinach work just as beautifully in this recipe.
Flavor Bomb: Add a Parmesan rind to the pot while simmering for a deep, salty umami boost.
