📖 The Story

You know those days when you have a beautiful bowl of mixed greens but absolutely no desire to use a boring, store-bought dressing? I’ve been there so many times. We usually have a bottle of something “safe” in the fridge, but it never quite hits the spot for a special Sunday family dinner. That’s exactly how this Blackberry Vinaigrette became a permanent resident in my kitchen. It is so vibrant, so purple, and so incredibly fresh that it makes even a simple spinach leaf feel like a gourmet treat.

Believe me, I learned a very “crunchy” lesson the first time I made this. I was in such a hurry to serve dinner that I skipped the straining step. I thought, “How bad could a few seeds be?” Well, let’s just say my family spent more time picking seeds out of their teeth than actually enjoying the salad! Trust me on this: take those extra sixty seconds to pour the mixture through a fine sieve. The resulting silky, velvety texture is what makes this dressing feel truly professional. It transforms the taste from a “fruit sauce” into a refined vinaigrette.

There is something so satisfying about the sound of the blender whirring those plump berries into a smooth puree. The smell of the sharp red wine vinegar hitting the sweet maple syrup is just mouth-watering. You’re going to love how the earthy scent of fresh thyme leaves rounds everything out. It’s a family favorite because it works with almost everything—bitter kale, soft butter lettuce, or even drizzled over a bit of goat cheese. It’s my go-to “secret weapon” for potlucks because people always assume I spent ages making it. Don’t worry, I won’t tell them it only took five minutes if you don’t!

• 2/3 cup Olive Oil
• 1/3 cup Red Wine Vinegar
• 1 tsp Fresh Thyme Leaves
• 2 tbsp Maple Syrup
• 1 tsp Sea Salt
• 1/2 tsp Ground Black Pepper
• (Optional) Extra Thyme for garnish

👩‍🍳 INSTRUCTIONS

1 Add blackberries, olive oil, vinegar, thyme, maple syrup, salt, and pepper into a blender or food processor.
2 Blend on high speed until the mixture is completely pureed and no large fruit lumps remain.
3 Taste the dressing and pulse in a little extra salt or pepper if desired.
4 Pour the mixture through a fine-mesh sieve into a bowl to remove all blackberry seeds.
5 Serve immediately or store in an airtight glass jar in the refrigerator.

👃 AROMA GUIDE

1 Stage 1: Sharp, tangy burst of red wine vinegar.
2 Stage 2: Sweet, berry-rich notes mixed with maple syrup.
3 Stage 3: Subtle, earthy herbaceous finish from the thyme.

🔧 PRO TIPS

• Use a rubber spatula to press the puree through the sieve to get every drop of goodness.
• If the dressing thickens too much in the fridge, let it sit at room temp for 10 minutes and shake well.
• This dressing pairs exceptionally well with toasted walnuts or pecans and creamy goat cheese.
