- 1 large ear corn cooked, kernels cut off the cob, or ¾ cup frozen corn, thawed
- ¾ cup diced cantaloupe
- ½ cup diced red bell pepper
- 1/3 cup diced red onion
- ¼ cup chopped fresh cilantro
- ¼ teaspoon red-pepper flakes or diced jalapeño chile pepper wear plastic gloves when handling the jalapeño
- Juice of ½ lime
- Salt and ground black pepper
